Tasty Tuesdays: Amaze-Balls

Happy Tuesday! For this week’s recipe, I am not actually posting a original recipe, but my version of a recipe from one of my sisters’s college friends. These are a great post-workout snack and a healthy alternative to the junk I used to eat during the summer. I sometimes eat too many so keeping them in the freezer is a life saver. Amaze-Balls 

Makes around a dozen servings depending on the size

Ingredients: 

1 Cup Oats (gluten-free if you are Celiac or sensitive)

1/2 Cup Dried Cranberries

1/2 Cup Chocolate Chips (Enjoy Life chips are dairy and soy free)

1/2 Cup Sunflower Seed Butter

1/3 Cup Honey (I usually use a little less than 1/3 cup since it is quite sweet already)

3 TBSPN Chia Seeds

Mixing Bowl

Spatula (to use to scrape out the honey and the sunflower seed butter)

Directions: 

1) Add the all of the ingredients together into a mixing bowl.

2) Mix with your hands until it is completely blended

3) Form the blend into balls and place them on a cookie sheet

4) Place the cookie sheet into the fridge until they harden (about an hour)

5) This is optional: place into a bag and freeze

    These look amazing! As a gluten free gal I am always looking for easy, gluten-free snack recipes to take with me on the go. I will definitely be making these asap and adding them to my rotation 🙂
