With a job that requires high energy levels, long days and a packed lunch every day grilled chicken is my savior. When learning to cook the summer before junior year, chicken was always the food I avoided because I was worried about undercooking it. I could get away with it then because I was eating Gluten, Soy and Dairy. No more. It’s a staple for me every week now. As the weeks go on, what I put on the chicken changes but my recent favorite way to make it has been plain and grilled with some garlic.
It is super easy and even if it isn’t my dinner for the night I can save it and it will last me long enough to get me through the week. It’s a big part of my meal prep. I tend to use packaged chicken breasts to save time.
Ingredients:
3 cloves of garlic (chopped)
One package of chicken cutlets
Salt, pepper
Avocado oil
Once I chop the garlic and clean the breasts, I mix everything in a bowl and then grill it. Depending on the thickness I cook it five minutes on each side. I LOVE my grill pan and it gives such a great color to the chicken. I’ve only set my smoke alarm off twice while making it…It takes me less than 20 minutes to grill up a package. For an easy dinner and leftovers for lunch, it is a winner. Chicken, I am no longer afraid of you.
