Comfort food is my favorite thing after a long day at work or a long week. My go-to Friday night meal is turkey chili with rice. It’s probably the only spicy food I’ve mastered. I want to say 10th time is the charm? I finally didn’t burn my mouth because it was too spicy when I made it last. It was probably helpful to use chili powder and not cayenne powder. Eh, you live and learn.
This recipe is the absolute bomb. It is easy and a perfect comfort food dinner. It also doesn’t use a lot of ingredients and it is super easy to prep. It’s also a one pot (or pan) meal and super hearty. Mine is very bare bones: protein, tomatoes, onions, garlic and spices but you can definitely add in any other elements you like!
You need:
Pack of ground turkey
Can of diced tomatoes
one (or two) onion(s) (depends on the size of the onion)
Three cloves of garlic
Chili Powder, salt, pepper and any other spices you want to add
Directions:
Brown the ground turkey in a pan with oil (I use Avocado oil) – make sure it is fully cooked through!
Add in the chopped onions and garlic
Once everything is cooked more add the tomatoes and let simmer (here is when I usually cook the rice so it finishes at the same time).
At this point you can add spices
You can serve this on its own, with tortillas or rice. I like to toss some Daiya cheese on top (the Mexican mix) and let it melt to give it extra flavor. You can definitely add some guac or other favorite chili toppings!
